Part of my mission statement here at Simply P Squared is to share the exciting work of other bloggers than I have come across in my daily travels. In today’s inaugural post of this series, I’d like to bring your attention to No Meat Mondays!
As someone who has tinkered with the idea of going both vegetetarian and vegan at different points in my life, I love the idea of devoting a single day of the week to eating this way. I just can’t give up meat all the time as I love everything from the greasy burgers at my neighborhood pub, to takeout chinese mystery meat. That being said, I appreciate and value both the nutritional and philosophical arguments for making a conscious decision to sustain from eating meat.
This new blog is the work of Karol Gajda, whose main writing can be found at RidiculouslyExtraordinary.com. It appears that Karol intends to post featured menu selections once a week complete with vivid imagery.
Seeing this call to action presented in such a light, simplistic, and inspiring way makes me think that this is something worth giving a shot. My wife and I plan our menus and go shopping on Sundays, so I’ll be checking back to the site over the weekend to see if there have been any updates. This week’s menu includes:
- Flaxseed Vanilla Fig Oatmeal (Breakfast)
- Roasted Vegetables with Fava Beans & Red Quinoa (Lunch)
- Koushari (Dinner)
Dessert does not appear to have been added, but I expect that is because the site is still in infancy. I hope to see this updated soon as that is always the best part!

Dude, you should come downstairs for dinner again. I made a great vegan curry on Monday. Tempeh, kale, mushrooms, green curry, quinoa. I’m probably vegan one day a week, vegetarian 6, and hardcore carnivore at least one day every two weeks or so. It’s a good way to do it and encourages variety.
I have a recipe for vegan hostess cupcakes!
